Berry Oat Bake
This 5 ingredient dish is perfect to serve guests for breakfast and simple enough for weekly food prep.
Healthy Tidbit: Oats are a good source of carbs and fiber. They also help reduce cholesterol levels and aid in digestion.

This week, I used local strawberries and sprinkled in fresh blueberries for added color and flavor. Melting the coconut oil fills the air with a tasty aroma and your guests will be drooling as the oat bake is cooling. Feel free to top with a scoop of your favorite yogurt for a texture and protein boost. What are we waiting for, let’s get started!
Berry Oat Bake (Serves 5 to 6 people/ Cook time-40 minutes)
Ingredients:
1 tsn coconut oil-melted to coat pie plate
1 cup old fashion oats
1 cup of your favorite milk
 2 large eggs
¼ cup maple syrup (optional, but tasty)
1-1.5 cups fresh blueberries or chopped strawberries*
Directions
Preheat oven to 350° F.
Melt 1 tsn coconut oil in a 9in glass pie plate for 1-2 minutes while the oven preheats. Use a potholder to remove pan from the oven and use a brush to coat entire pan.
Lightly whisk eggs, milk, and maple syrup in a large bowl.
Mix in oats.
Pour batter into glass pie plate and evenly spread berries across the top.
Bake for 40 minutes.
Cool for 5 minutes and serve with fresh fruit or a scoop of your favorite Greek yogurt.
Refrigerate leftovers for up to 4 days and serve cold or reheat individual pieces in the microwave for 20-30 seconds.
Notes: *love the texture with fresh berries, but you can use thawed and drained frozen berries.
